Christmas Sauerbraten Recipe Ingredients

4 pounds boneless, rolled beef chuck or round
Salt and pepper
3 cups white or cider vinegar
3 cups water
4 large onions, sliced
1 bay leaf
1 teaspoon whole black peppercorns
2 tablespoons sugar
10 whole cloves
All-purpose flour
2 tablespoons lard or vegetable oil
Crumbera Knepp, page 24
3 tablespoons all-purpose flour
1/4 teaspoon ground ginger
1/4 teaspoon ground allspice
1/2 cup raisins

Christmas Sauerbraten Recipe Cooking Process

Rub beef with salt and pepper. Place in a large, stainless, glass or plastic bowl (not
aluminum). In a large saucepan, combine vinegar, water, onions, bay leaf, peppercorns,
sugar and cloves. Heat just to simmering; do not boil. Pour vinegar mixture over beef to
partially cover. Cool, then cover and refrigerate 4 to 6 days, turning meat each day.
Remove meat from marinade, reserving marinade. Wipe meat dry. Rub meat with flour.
Heat lard or oil in a heavy Dutch oven. Brown meat on all sides in hot fat. Pour vinegar
mixture over beef. Taste and dilute with water if it seems too sour. Reduce heat. Simmer,
covered, 2 to 3 hours or until meat is tender and vinegar mixture cooked down. Prepare
potato balls for Crumbera Knepp. Remove beef and keep warm. Strain liquid and return
to Dutch oven. In a cup, mix 3 tablespoons flour with a small amount of water to make a
paste; whisk into liquid in Dutch oven. Bring to a boil and cook, whisking, until
thickened. Add ginger, allspice and raisins. Cook potato balls for Crumbera Knepp.
Moisten roast with gravy and serve remainder in a gravy boat. Serve meat with hot

3 medium-sized beets, cooked
1 large potato, cooked
1 pound ground cooked meat
Salt and freshly ground black pepper to taste
1/2 cup butter
1 medium-sized onion, chopped
1 tablespoon whipping cream

Christmas Red Flannel Hash Recipe Cooking Tips

Grease a 2-quart baking dish. Chop beets and potato using a knife, or chop in a food
processor fitted with the steel blade until coarse but not fine. Turn into a medium-sized
bowl. Mix in ground meat, salt and pepper. In a large skillet, heat half of butter. Add
onion. Cook over medium heat 5 minutes or until onion is translucent. Stir in meat
mixture. Cook over low heat 10 minutes, stirring occasionally. Preheat broiler. Lift
mixture into greased baking dish. Melt remaining butter and combine with cream.
Spoon over hash. Broil 3 inches from heat 5 minutes or until hash has a rich brown crust.

1 (3- to 4-pound) lean beef brisket or corned beef
8 medium-sized onions, peeled
1 small head cabbage, cut into wedges
8 large carrots, cut into chunks
2 white turnips, cut into 1/2-inch slices
8 medium-sized potatoes, quartered
8 whole beets
Salt and freshly ground black pepper to taste
Melted butter (optional)
Freshly grated horseradish (optional)


Christmas New England Boiled Dinner Recipe Cooking Tips



Place meat in a deep heavy pot. Add water to cover. Simmer 3 to 4 hours or until meat is
fork-tender. Add whole onions, cabbage, carrots, turnips and potatoes. Simmer 20 to 30
minutes longer or until vegetables are tender. Meanwhile, place beets in a separate pot.
Add water to cover. Simmer until tender. Peel cooked beets. To serve, slice beef and
arrange vegetables around it on a large platter. In the classic arrangement, carrots and
turnips are at opposite ends. Cabbage wedges and beets are on opposite sides of platter
from potatoes and onions. Season with salt and pepper. Pour melted butter over
vegetables, if desired. Serve with Northern Johnnycake or Corn Bread, page 142, Beaten
Biscuits, page 139, or white rolls. Freshly grated horseradish can be passed at the table.
Apple Pie, page 188, completes the menu. Makes 4 servings with enough leftovers for

1 to 1-1/2 pounds round steak
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 teaspoon dried leaf marjoram
1/4 cup all-purpose flour
1/4 cup butter
2 medium-sized onions, thinly sliced
1/2 cup beef broth
1/2 cup dairy sour cream

Cooking process

Cut steak into 4 pieces. On a plate, mix salt, pepper, marjoram and flour. Dredge steak in
flour mixture. With the side of a plate, pound flour mixture into steaks, adding more of
mixture until steaks are about doubled in diameter and about 1/4 inch thick. In a heavy
skillet, heat butter over medium heat. Add onions. Saute 10 minutes or until golden. Lift
out onions; set aside. Add steak to hot fat; brown over medium-high heat. Add beef
broth and sauteed onions. Cover and simmer over very low heat 1 hour or until steaks
are fork-tender. Remove steaks onto a warm platter. Stir sour cream into pan drippings,

1 lb (450 g) raw beetroot 2 shallots 6 fl oz (175 ml) red wine vinegar ½ level teaspoon mixed pepper berries ½ level teaspoon crushed sea salt
Pre-heat the oven to gas mark 5, 375°F (190°C).

You will also need an 18 fl oz (500 ml) jar, sterilised as described above.
Trim the beetroot and wipe them, but leave the skins on. Then wrap them all up together in a parcel of foil. Place the parcel on a baking sheet and bake them for about 3 hours or until they feel tender when pierced with a skewer. Now remove them from the oven and, as soon as they are cool enough to handle, peel off the skins and slice the beetroot thinly.
Peel and thinly slice the shallots too, then layer the beetroot and shallots in the sterilised jar. Next place the vinegar, berries and salt in a small saucepan, bring up to simmering point, and pour the whole lot straight over the beetroot and shallots to cover them completely. Seal the jar immediately, label it when cold, then store. The
beetroot doesn't need to mature – it can be eaten within a day or two and will keep well, provided it is always totally immersed in the vinegar (so you may need to top it up after you use some).

Place the egg whites in a bowl, then stir in the icing sugar, a spoonful at a time, until the icing falls thickly from the spoon. At this stage, stop adding any more sugar and whisk with an electric whisk for 10 minutes or until the icing stands up in stiff peaks, then stir in the glycerine.

Now spread the icing all over the top and sides of the cake as evenly as possible using a palette knife. Switch to a broad-bladed knife (or smaller palette knife) to 'spike' the icing all over to give a snow-scene effect. 1 cup of butter, softened
1 1/2 cups of granulated sugar

1 jar (8 oz.) of maraschino cherries, drained & chopped

In large bowl, beat cream cheese, butter, granulated sugar, vanilla and spices. Add eggs,
1 at a time, mixing well after each addition. In small bowl, combine flour with baking

1 cup of diced preserved pineapple
1 cup of pecan halves
1 cup of blanched almonds, cut lengthwise
1 teaspoon of nutmeg
1 1/2 teaspoon of cinnamon
1 1/2 teaspoon of ground cloves
1/2 teaspoon of baking soda
1 cup of shortening, softened
6 eggs, separated
1/2 square of unsweetened chocolate, melted
1/4 cup of fresh, frozen or canned lemon juice
1/4 cup of orange juice
2 cups of sifted all purpose flour

Dark Christmas fruit Cake Recipe cooking process

Thoroughly grease 3" to 4" deep 10" tube pan. Cut heavy waxed paper to fit bottom and
sides of pan. Line pan with waxed paper (be sure paper fits snugly) and lightly grease
paper. Or use aluminum foil without greasing. In large bowl, thoroughly mix currants,
raisins, peels, citron, cherries, pineapple and nuts with 1 cup flour until all are coated
with flour. Start heating oven to 300 degrees. Sift remaining 1 cup flour with spices
and soda. In large electric mixer bowl, with mixer at medium speed, or cream blend
shortening with sugar until light and fluffy. Add egg yolks one at a time, beating
thoroughly after each addition. Add melted chocolate. At low speed or blend, beat in
alternately, just until smooth, flour mixture and fruit juices. When mixture is thoroughly
blended, stir by hand into fruit mixture. Beat egg whites until stiff; fold into cake
mixture. Turn into tube pan. Bake 2 hours and 20 minutes or until cake tester inserted

Grease and flour bottom only of 13x9 inch pan. Set aside. Prepare and bake cake mix
according to package directions. Punch holes in top of warm cake with small knife.
Combine condensed milk and cream of coconut, pour over warm cake; let cool. Spread
pineapple over cake. Top with whipped topping. Sprinkle coconut on cake. Decorate
with cherries and pecans. Cover and chill at least 8 hours. Cut into squares and serve.

3 cups of pecans, chopped
2 sm. boxes of coconut
3 rings of candied pineapple
2 boxes of dates
1 lb. of candied cherries
1 can of Eagle Brand condensed milk
1 tablespoon of vanilla
1/2 cup of flour

Cut everything and mix well. Add milk, vanilla, and flour. Line a tube pan with oiled
brown paper. (I use a clean brown grocery bag, measure pan size and cut it to size. I use
oil or shortening to oil paper.) Pack mixture lightly into paper lined tube pan. Bake 30
minutes at 250 degrees and 30 minutes at 350 degrees. Cool a little. Invert cake on rack
and remove paper. Place on cake plate and cool before serving. It keeps well (at room

1 (3 oz.) pkg. of red gelatin (raspberry, strawberry or cherry)
1 (3 oz.) pkg. of orange gelatin
1 (3 oz.) pkg. of lime gelatin
2 cups of graham cracker crumbs
1/4 cup of butter or margarine
8 oz. of pineapple juice
2 tablespoons of sugar
1 (3 oz.) pkg. of lemon gelatin
2 pkgs. of whipped topping mix

Colors of Christmas Cake Recipe Cooking process


Mix red, orange and lime gelatins by instructions on box. Pour gelatin into 3 shallow
pans (9 x 14 inches) and let set. When set, cut each pan of gelatin into 1/2 inch cubes and
mix together in bowl. Return cubed gelatin to refrigerator for later use. Mix graham
cracker crumbs, butter or margarine together and press into bottom of rectangular cake
pan (9 x 14 x 2 inches). Bake in 350 degree oven for 5 minutes or until brown. Remove
and let cool. Dissolve sugar in pineapple juice and bring to a boil on stove. When
boiling, add lemon gelatin and dissolve stirring frequently. remove from stove and allow
to cool until it forms a syrup. Prepare 2 packages of whip topping according to label
directions, add pineapple-gelatin mix to whip topping and fold in well. Fold in your
cubed mixed gelatin into your whip topping, and then spoon completed mixture into your
pan with graham cracker crust. Sprinkle a little graham cracker crumbs on top of your

In a large mixer bowl, dissolve yeast and warm water. Add buttermilk, eggs, 2 1/2 cups
of the flour, the butter, sugar, baking powder and salt. Blend 1/2 minute on low speed,

enough remaining flour to make dough easy to handle. Dough should remain soft and

375 degrees. GLAZE: Mix 2 cups confectioners' sugar, 2 to 3 tablespoons water or milk
and 1 teaspoon vanilla. Cream until smooth. Trim with colored sugar.
