Whole Roasted Chicken Recipe
Whole Roasted Chicken Recipe Ingredients
1 lemon, quartered
1 small onion, quartered
4 cloves garlic
1 (3- to 4-pound) whole roasting
chicken, rinsed and patted dry, any
giblets removed
1 to 2 teaspoons olive oil
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon paprika
1 teaspoon dried thyme

Place lemon, onion, and garlic in the cavity
of the chicken. Rub the chicken skin lightly
with olive oil and season all over with a
mixture of salt, pepper, paprika, and thyme.
Place the chicken in the slow cooker; add
no liquid! Cover with the lid, and cook on
low for 6 to 8 hours, until meat is fallingoff

clear. Remove chicken from the pot, using
a spatula for support. Carve or slice the
meat, discarding the vegetables.
To make gravy, from the cooking juices,

enough water to make a paste; turn the
slow cooker to high, or transfer the juices
to a saucepan and cook over medium heat
until thickened. Adjust the seasoning
to your taste with salt, pepper, and ½
