Favorite French Dip Recipe Ingredients


1 large onion, sliced into rings

1 (3-pound) beef roast, such as eye,
rump or sirloin tip

2 cups beef broth

6 peppercorns

1 bay leaf

Several cloves, or to taste, garlic,
crushed

Salt and freshly ground black pepper,
to taste

Water to cover roast

1 to 2 loaves crusty French bread

Place the onion in the slow cooker. Place
the roast on the onions. Pour the beef
broth over the roast, and add seasonings.
Add enough water to cover the roast.
Cover with the lid and cook on high for 5
to 6 hours, or on low for 10 to 12 hours,
adding more water if needed to keep the
roast covered. Remove the meat from the
slow cooker and let stand 5 to 10 minutes
before slicing. Slice the meat across the
grain. Set aside, and keep warm.
Strain and reserve the liquid, discarding
the onion, peppercorns, garlic, and bay
leaf. Skim off any excess fat, making a
dipping broth. Return the broth to the
slow cooker. Add the meat slices back to
keep moist. (You may add more water or
broth to make more liquid for dipping.)
Adjust the seasonings to your taste. Serve
the meat warm as sandwiches on French
bread, with the dipping sauce provided in
