“Ring-the-Dinner-Bell” Bell Peppers For Christmas Ingredients


8 large bell peppers, green, yellow or red

3 tablespoons vegetable oil

1 to 1½ pounds ground beef

1 onion, diced

2 large tomatoes, diced

2 tablespoons vinegar

1 teaspoon sugar

1 teaspoon ground cinnamon

¼ teaspoon ground cumin

1 teaspoon sea salt

½ cup raisins, plumped and drained

Green chilies or chili powder, to taste

½ cup slivered almonds or pine nuts
(optional)

Cap the peppers and remove the ribs and
seeds. Set aside.
Heat the oil in a large skillet over medium
heat and cook the beef and onion until
the onion is transparent and the meat is
browned. Drain off any excess fat. Add the
rest of the ingredients (except the nuts)
and mix well. Gently pack the fi lling into
the peppers. Spray the slow cooker with
nonstick cooking spray. Carefully place
the peppers, side by side, into the slow
cooker. Pile any extra fi lling on top of all, if
necessary. Cover with the lid and cook on
low for 4 to 6 hours, until the peppers are
tender but still hold their shape and the
fi lling is set. Garnish with slivered almonds
