PUMPKIN SOUP RECIPE
PUMPKIN SOUP RECIPE INGREDIENTS
6 Servings
The lowly kalabasa is part of the squash
family and can be substituted for the
pumpkin used in this recipe.
1/2 medium sized pumpkin or
kalabasa
1 tablespoon butter
1 medium onion, sliced
3 cloves garlic, sliced
4 cups vegetable stock or broth
Salt and pepper
1/2 cup sour cream
PUMPKIN SOUP RECIPE COOKING PROCESS
Peel the pumpkin and cut into I-inch
cubes.
Melt butter in a saucepan and saute
onion and garlic over low heat.
Add the pumpkin cubes and pour in
broth. Simmer until the pumpkin cubes are
tender then mix the soup using an
immersion blender. Or simply stir well
until blended. Season with salt and pepper.
Top with the cream before serving
