Tasty Tortellini Soup - Tortellini Soup Recipe Ingredients


1 (14.5-ounce) can diced tomatoes

1½ cups chicken broth

½ teaspoon dried crushed basil

¼ teaspoon pepper

2 cups vegetables, such as sliced carrots,
frozen thawed broccoli fl orets,
frozen thawed caulifl ower, or frozen
thawed spinach, squeezed dry

1 cup frozen peas

1 (7-ounce can) mushroom stems and
pieces, undrained

8 ounces refrigerated tortellini, as
desired

Freshly snipped parsley, for garnish

Freshly shaved Parmesan cheese,
for garnish

Tasty Tortellini Soup - Tortellini Soup Recipe cooking Process
Put the fi rst 4 ingredients in the slow cooker.
Add 1½ cups water and the vegetables,
except the peas and mushrooms. Cover
with the lid and cook on high for 3 to 4
hours. Add the peas, mushrooms, and
tortellini. Put the lid back on and cook 1
hour more, until the tortellini is tender.
Garnish with the parsley and shaved
Parmesan cheese curls and serve.
Cook’s Note: Browned crumbled Italian
sausage may be added to this soup. Place
in the slow cooker at beginning of recipe.
Or a vegetarian soup may be made by
substituting vegetable broth in place of
chicken broth.
