Stew Chicken - Stew Chicken Recipe Ingredients
3 tablespoons olive oil
2 pounds boneless, skinless chicken
breasts, cut into bite-sized pieces
1 onion, chopped
4 cloves garlic, minced
1 cup chopped celery
1½ cups frozen mixed vegetables, such
as broccoli, caulifl ower, and beans,
thawed
1½ cups frozen carrots, thawed
3 cans chicken broth
1½ cups frozen peas, thawed
1 (8-ounce) package egg noodles,
partially cooked
1 teaspoon salt
¼ teaspoon pepper
Stew Chicken - Stew Chicken Recipe Cooking Process
Heat the oil in a large skillet over medium
heat and sauté the chicken, onion, and
garlic for 5 to 8 minutes. Add the celery
and cook for 1 to 2 minutes more.
Transfer to a slow cooker and add the
mixed vegetables, carrots, chicken broth,
1 cup water, salt, and pepper. Cover with
the lid and cook on high for 4 to 6 hours,
or on low for 8 to 10 hours. During the
last hour of cooking, add the egg noodles
and the peas, cooking until the noodles
are tender and the peas are cooked but
not mushy. Adjust seasonings, if desired.
