Steamed Shrimp - Steamed Shrimp Recipe Ingredients

11⁄2 pounds medium shrimp (35 to 40 per pound), deveined but not peeled

1.Place the shrimp in a bamboo steamer. (If all the shrimp do not fit in one steamer basket and allow you to still use the cover, steam them in batches or use stacking steamer trays, covering the uppermost basket.) Alternatively, you can use a conventional metal vegetable steamer.

2.Fill a large pot—one whose width matches the bamboo steamer or one that accommodates the vegetable steamer—with water to a depth of 1 inch. Or you can set the bamboo steamers in a wok filled with just enough water to reach to 1⁄2 inch below the bottom of the steamer basket. Bring the water to a boil over high heat.

3.Place the steamer basket(s) on top, cover, and cook until all the shrimp are pink and firm, about 5 minutes, or set the filled vegetable steamer in the pot, cover it, and steam for 5 minutes. Immediately remove the shrimp from the steamer. Be careful—the steam is very hot.

4.Serve the shrimp hot, at room temperature, or cold, alongside your favorite dipping sauce, a small dish of melted salted butter, or equal parts of soy sauce and rice wine vinegar whisked together.Steamed Shrimp - Steamed Shrimp Recipe
