Spicy Pecans Recipe Ingredients

2 large egg whites
Pinch of coarse salt
1 teaspoon cayenne pepper, or more to taste
1 teaspoon ground cumin
4 cups pecan halves
1/2 cup sugar
4 tablespoons (1/2 stick) unsalted butter

Spicy Pecans Recipe Cooking Process

Set the oven at 350 degrees.
In a large bowl, beat the egg
whites and salt for 1 minute with an
electric mixer. Add the cayenne pepper
(if you want the nuts to be spicier, add
up to 2 teaspoons) and cumin and beat
for 1 minute more.

Stir in the nuts and sugar with a
large metal spoon, making sure all of the
nuts are coated with the egg-white mixture.
Place the butter on a rimmed
baking sheet and transfer it to the hot
oven. Leave the pan for about 1 minute
— only until the butter melts — then
quickly remove from the oven. Spread
the pecans on the baking sheet in a single
layer and stir to coat them with the
butter.

Return the pan to the oven and
bake the pecans for 30 to 40 minutes,
stirring every 10 minutes, or until the
nuts are golden brown and have
absorbed the butter.
Remove the nuts from the oven;
they should be crisp and dry. If they’re
still moist, they’re not done. Stir them
again, and set them aside to cool. Store
them in an airtight container for up to 3
