Pita pizzas with goat cheese and scallions recipe
4 medium pita breads
4 ounces fresh goat cheese
Olive oil, for sprinkling
1 bunch scallions, finely chopped
Coarse salt and freshly ground black pepper, to taste

Set the oven at 400 degrees.
Place the pita rounds on a baking
sheet. Heat them for 2 minutes. Dot
them with cheese and return them to the
oven for 5 minutes, or until they are
warmed through and the cheese is hot.
