Bran Muffins - Bran Muffins Recipe Ingredients
Nonstick spray or paper muffin cups
12/3 cups all-purpose flour
1 cup wheat bran (do not use bran cereal)
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon grated nutmeg
2 large eggs, at room temperature
1/2 cup packed light brown sugar
1/2 cup honey
11/2 cups buttermilk (regular or low-fat)
1/3 cup canola or vegetable oil 1 teaspoon vanilla extract
1 cup raisins
Bran Muffins - Bran Muffins Recipe Cooking Process
1. Position the rack in the center of the oven and preheat the oven to 400°F. To prepare the muffin tins, spray the indentations and the rims around them with nonstick spray, or line the indentations with paper muffin cups. If using silicon muffin tins, spray as directed, then place them on a baking sheet.
2. Whisk the flour, wheat bran, baking soda, baking powder, salt, cinnamon, and nutmeg in a medium bowl until well combined. Set aside.
3. In a large bowl, whisk the eggs, brown sugar, and honey until thick and pale, about 2 minutes. Whisk in the buttermilk, oil, and vanilla, then stir in the raisins. Quickly stir in the flour mixture with a wooden spoon until moistened.Bran Muffins - Bran Muffins Recipe
