                                                                 Shrimp Toast Recipe



    Shrimp Toast Recipe Ingredients:

1⁄2 cup Japanese bread crumbs (panko), or plain dry bread crumbs

8 cups plus 1 tablespoon peanut or vegetable oil

1 pound small shrimp (more than 55 per pound), peeled and deveined

2 large egg whites

4 teaspoons minced ginger

4 teaspoons soy sauce

4 shallots, minced

 8 slices dense white bread, crusts

removed Salt to taste

    Shrimp Toast Recipe Description:


1.Place the bread crumbs on a small plate. Set aside.

2.Pour 8 cups of the oil into a large saucepan at least 4 inches deep and 10 inches in diameter; the oil should be at least 11⁄2 inches deep but reach no more than halfway up the sides of the pan. Alternatively, fill an electric deep fryer with oil according to the manufacturer’s instructions. If you’re using a pan, clip a deep-frying thermometer to the inside and place the pan over medium heat. Heat the oil to 375°F. Adjust the heat to maintain that temperature while you prepare the shrimp toasts. If you’re using an electric deep fryer, set the temperature control to 375°F.

3.Combine the remaining 1 tablespoon oil, shrimp, egg whites, ginger, soy sauce, and shallots in a food processor. Process until a smooth paste is formed.

4.Divide the paste equally among the 8 slices of bread, spreading it evenly to the edges. Cut each slice diagonally into 4 triangles.

5.Dip each triangle, shrimp side down, into the bread crumbs. Press down lightly so that the crumbs adhere to the shrimp. Fry the toasts in the hot oil, adding only as many at a time as will fit without crowding the pan, until golden brown on both sides, about 2 minutes, turning them with tongs or a metal spatula once or twice. Remove the toasts from the oil and drain on paper towels. While they are still hot, sprinkle the toasts with salt. Serve immediately.     Shrimp Toast Recipe
